Saddle choices...
Would either of these bikes look good with a honey, or brown, Brooks...with matching wrap?
Or, should I leave them with a black saddle?

There is a reason people go for matching tape and saddle. And black goes with everything. Everything.

They look great, leave them as they are. Honey and brown look better on darker colored frames.

The Miyata looks spot on, as is.
The Ironman is crying out for a vintage Wht Selle Italia Flite w/ Wht bar tape. One of my favorite looks from back in the day.
(And this from a guy who is ALWAYS looking for an excuse to put a Honey Brooks on anything with wheels)

The white Selle Italia turbo would look so good on the Centurion as well. Brooks is Brooks but some bikes look better with a racier looking saddle, and that Ironman is one.

Brown and Honey...
Brown and Honey? On these 2 bikes it looks good. For everyone, if looking for what looks good consider the colour wheel. Contrasting and complimentary colours generally look best unless the bike is a "true" neutral such as white, or silver, black, etc. Complimentary colours can be "analogue", triad, split, rectangular, and square. Tiger color has a good page describing these terms with graphic examples.Just remember the 4 primary colours: red; blue; green and yellow. That will ensure you use the "correct" colour wheel.

I think your Miyata's looks are suffering a bit from the style of the saddle bag. It is modern and sleek and distracts from the vintage look. To my eyes at least. The black is a good choise of colour for the saddle and tape.

I like the honey/honey saddle and wrap on gold bikes, not sure about your color. If you don't plan to match the bar wrap, I'd stick with a black saddle.

I used to default to the matchy matchy thing on all my bikes.. in fact I had spray cans of black vinyl dye that I obliterated bright color saddles with. I cringe thinking about it. But anyway, I've realized contrasting colors is where its at...

I went with another black Brooks, as my sit-bones seem to appreciate the B-17, and I now have them on all three of my bikes. Shrevvy still has a brown and a honey on the For Sale forum, at what I considered a fair price.
I do still have the white Turbo that came with the Ironman, but it's in so-so shape and not as comfy as the Brooks.

I went with another black Brooks, as my sit-bones seem to appreciate the B-17, and I now have them on all three of my bikes. Shrevvy still has a brown and a honey on the For Sale forum, at what I considered a fair price.
I do still have the white Turbo that came with the Ironman, but it's in so-so shape and not as comfy as the Brooks.
