If you ever put mudguards on the bike, forward facing dropouts make wheel removal much easier.

I would as someone already suggested not grind the brackets off but use heat to remove them , being very careful not to use too much heat. Anything that was once brazed on can be put back on ! I guess its just a case of a very limited market that you would be selling to if you removed these as it would be an expensive job to return it to "original" for gears. However I can understand your desire for perfection!
