Senior Ryder 00 already has a RD (9 spd cassette) so I agree a a double, maybe a half step, might be the simplest way to go, but then again how often do any of us chose the simple path?

I do not mean to discourage you (or anyone) from a project like this. I am just pointing out the pitfalls. Sometimes trying something impractical is a very worthwhile adventure. It might work, which would be rewarding. And if it doesn't, lessons learned.
