What should I expect to pay?
I'm looking into getting some kind of high end early 80's Italian bike, like Colnago, Cinelli, Ciocc, etc. What tends to be the going rate on one of these babies, with the full Campy group and Columbus/Reynolds tubing and in decent shape? A guy in my town has a nice Ciocc for $800, but it seems to be a little bit high...

800 is a good price if the bike has any kind of record on it. If it has record it is probably a top tier frame.

Any 80's or early 90's Italian bike with Columbus in decent shape with higher end Campy, Dura-Ace, or 600 will usually run $500 to $1000. Reynolds is good material too, but most Italian bikes (made in Italy) usually stuck with Columbus tubing.
Any of the bikes you mentioned will certainly be worth that.
