If she really wants a coaster brake, consider installing a Sturmey-Archer 3-speed or Shimano Nexus 7-speed coaster hub. You will then have a great use for the upper shift cable guide/stop. Keep both caliper brakes, as well -- a bit of redundancy in the braking system is never a bad thing.
