Stem Size on old Nishiki?
Not sure of exact year, downtube shifter, quill stem. Maybe 1"? Maybe 1 and 1/8"?

more info needed: could be 1" (22.2mm) could be 0.833" (if early and lower end) probably not 1-1/8" if it's a road bike.

Do you have the old stem? Caliper nearby? Ruler with CM/MM on it?

Probably 1". Although my mid 70s Competition has the .833 size.
