I've received a few questions on the wheels. They are a set of 700c Black Araya wheels that I traded for a set of handlebars. This particular set of rims had a rear wheel that seemed to be popping spokes. I replaced the spokes and relaced both wheels (first time, several evenings) with stainless DT spokes. I went cheap on the tires with Michelin Dynamics but they've done fine.
As for the derailleurs, I ended up using the Exage 300 EX DRs I removed from the Nishiki Century in my sig. The bike now carries Shimano 600 brake levers, exage frt and rear DR, Shimano frewheel, Exage hubs, Sugino cranks, and Suntour DT shifters.

Very nice transformation! It is hard to believe that it is the same bike! Excellent work!

Bringing this thread back to life....got any pictures of the shifter conversion as it happened? Mine are on the stem, don't like them there, bump them when standing and climbing hills...

You can reuse the cables on the bike but now would be a great time to get a new set. I reused the DR housing (after lubing).
Pull the stem out of the frame and slip off the stem shifters. Clamp your new ones where the old cable stop used to be and reassemble. I didn't even have to adjust the DRs.

Update:
I was bored in the garage so I decided to trim my shift levers.
Here's a mid-stage shot. I had some detail work left to go.
After polishing and final install.

Great job on this. You give me inspiration for my new-to-me Fuji Espree. Any trouble fitting 700c wheels with the brakes? Silly question: anyone know how to pronounce Espree? LOL.

Thanks TweedleDee. This bike has come a long way since I got it. The wheels were no trouble at all. I think I just readjusted the pads. Here is the most recent shot with the logos removed. I never cared much for the "Espree" text.
