Hey New Yorkers:
Anyone know any good bike shops with lots of extras and spare parts for vintage? I know and like Habitat, but I'm looking for more of a used stuff and old steel frames store... Or do we just call that CL?

Continuum cycles on Avenue C carries a selection of vintage steel frames, all of them high-end. Frejus, Cinelli, etc. They may have some parts in stock, but not much.

That's about it; most stores that have been in business for 10+ years will have a few bits and pieces but no one specializes in it.

I would also suggest visiting Recycle-A-Bicycle or the Time's Up co-op in Williamsburg. I'm one of the senior mechanics for Time's Up, and we have a ton of vintage bits at the shop. However, not much of it is high-end; expect lots of midrange and low-end Suntour, Shimano, and a handful of French bits. As for frames, inventory changes all the time but there's generally 4 - 5 vintage steel frames laying around in the back yard.

The Brooklyn Bike Peddler has a bunch of crates of stuff, but you've got to be willing to pick through it. Some is good, but most is low end.

It's pretty rare to find vintage stuff in a shop here. Red Lantern on Myrtle Avenue here in Brooklyn sells used vintage bikes, and they sometimes have some bits and bobs lying around. Very nice guys over there. They also have a bar / coffee shop in the bike shop. Pretty cool.

Bespoke on Lafayette, also in Brooklyn, sells VO and modern classic type-stuff. Those are the two shops I frequent when I need something.

Yeah, but he has shipping containers full of bike parts that replenish the crates. He told me that isn't even the foam at the top.
