I have a video camera on the handlebars. Occasionally it picks up more than just wind, road and engine noise.

One of the stranger interactions was some dude who pulled up next to me at a busy intersection, frantically got my attention and said:

It was a weird mid April day that started as a perfect day, a very strong tailwind (25-30mph), dusty, leaves, palo verde flowers, cups, burger wrappers were flying all over the place. I was having this chat with two guys next to me at the front of line at a red light. But then I was gently rear ended by an older guy whos car apparently couldn't stop. You can hear them squeal toward the very end of this clip

Then 10min later I encountered that dude telling me about the weird drivers who hit him.

When others say something they think is nice I say, "Thank You." If it is hostile I just say, "God Bless You". That has always ended the interchange.
