My decision-making process for a new commuter started with the idea of an Amsterdam-style bike like the Azor, then moved on to the Retrovelo Paul. I ended up buying the Breezer Uptown 8. That Retrovelo Paul is a beautiful ride, but I personally didn't see the value in the extra $, and I wanted a chain case to keep the sand out.

Clever Cycles sells both. If I had the money, I'd try a Retrovelo. The designs remind me of what I like in the femme Bianchi Milano.

I know you've been looking at european bikes, but the chinese flying pigeon is quite a nice bike. Nicer still if you use some of the money you save to upgrade the gearing from single speed.

Another option is a Pashley, particularly in the UK. Proper British Roadster with full chaincase and excellent quality.

I've had my eye on a Cactus 10 BigBoy, which is German-built, similar to the Retrovelo. Then there's Pashley Guv'nor - its available in either single speed or three speed configuration. Neither is cheap but they're both of excellent value for the money.

This was a great thread to read - if somewhat dated now - but nonetheless informative! My mission seemed simple enough - to find a dutch style commuter bike for my girlfriend that I will get to borrow as well! After reading this thread and lots of other blogs and chat forum conversations, we are test riding a Pilen Lyx on the weekend which I can't wait to see in the flesh... and ride. I'll post an update if anyone is interested...
