Single Speed Winter Bike?

I've been thinking of converting my winter MTB in a into 3 speed or single speed. And maybe also adding disc brakes. And... maybe I should just get another bike?
Last winter I just make sure to leave it in a comfortable gear when I parked it at work since the bike racks are outdoors and uncovered. It came in handy on a few occasions I couldn't shift during the first 5-10 minutes on my ride home due to snow/ice on the derailleur.
