GT, Canyon, or Scott?

Hello there.
I would like some opinion on my now a rabbit hole of a problem.
I was set on getting a BMC AC01 Sora 2016 for 850 euros.

But life is never easy and I accidentally found out about gravel bikes.

Because I wanted a racer feel combined with big tires (30mm) and a relaxed geometry, I now believe these are the bikes I want. I did my research and below are my choices.

GT Grade alloy 105 2016
Comes in at 910 euros. Not crazy about the colours. Also the sizing is a mystery to me as I ride a 52cm road bikes and from what I read, this bike doesn't come in "standard" sizes.

Canyon Endurace AL 5.0
Can't test ride this one and I like the colours better. Tiagra and 900 euros.

Scott Speedster Gravel 20
1200 euros and tiagra. But it's my favourite colour scheme out of the 3. But it's a bit beyond my budget of 1000 euros.

Sorry for being superficial, but how the frame looks means quite a lot to me. And frankly most of you will agree at this price point, there probably won't be much difference in performance. The use of the bike will be to ride on crappy pothole Berlin pavement on a semi daily basis.

I also thought about swapping the flat bar for a drop bar for the bmc.

Any opinion will be welcome.

I forgot to tell you that outside of the bmc, I have not been able to test ride any of them. I live in Berlin and these bikes are not available in lbs. So I will need to measure myself and whatever bike I choose will fit me.

Bikes: Road bike is a Carbon Bianchi C2C & Grandis (1980's), Gary Fisher Mt Bike, Trek Tandem & Mongoose SS MTB circa 1992.

It's taken long for this thread to go up, so here's the update.

I've narrowed down my choices to Canyon and Scott.
I still would like to hear from people who have had the chance to ride the Canyon and/or the Scott.

Or any other gravel bike in the region of 1000 EUR with nice colours.
