Help me pick my New Gravel Bike 3T, Open, Lauf, others?

Help me pick my New Gravel Bike 3T, Open, Lauf, others?
I am a 53yr old triathlete at the pointy end of competition. Good rider, have use for a gravel bike for the following purposes
-winter training group rides in Northern Westchester County NY
-year round riding on gravel roads in Vermont where I have a 2nd house
-gravel race events in Vermont
-potential to use this on long course MTB events (Austin Rattler & Leadville MTB100) both of those courses are not really technical and can get away with a Gravel bike on.
I have read great reviews of the new Lauf True Grit, the 3T and the OPEN UP. I am leaning towards the True Grit based on a review that suggests it has MTB like handling. Also based on the recommendation of a friend who is an Ex Tri Pro who used it to win the KOM on the Belgian Waffle ride and just competed in the Dirty Kanza. The other appealing item is the suspension, in that I have a bad shoulder, currently recuperating from a bike crash where I broke my Scapula.
Looking for all suggestions, criticism and comments as well as suggestions of other bikes, particularly boutique bikes.
