Bianchi Lynx to Volpe Sora

Seems like this could work. Picked up the Lynx for $40 in great shape and already have a lot of the parts I'll need. Can anyone give me advice/ input on this project before I start.
The frame is very similar

You want to turn a 26" mountain bike into a 700c drop bar cx/touring bike? That seems...difficult. Yeah, Ill go with difficult.

You may find the top tube on the frame is long so you have to put the drop bars right on top of the steerer to make it fit right

I would not make a drop handle bar cyclocross machine from a mountain bike.
Nothing wrong with installing narrower tires and comfortable bars to make a gravel cruiser out of it.

Show Your Vintage MTB Drop Bar Conversions
281 pages of examples. Again, you won't turn it into a Volpe since its a totally different bike, but you can certainly drop bar the mtb.
That link is a healthy mix of nice neat examples when done well and questionable examples due to poor fit and geometry.
