A place with a bunch of broken e-bikes. Get some tools, replacement parts, DVM, e-bike tester, put out an ad for low repair prices, and start getting experience.

You might want to browse some forums and get a handle on the most common problems, and how to get the information you need from users who are likely to be unwilling to describe just exactly how they screwed up.

I did this one to fill in some gaps in my skills.

LEVA Certified Technician Training ? Light Electric Vehicle Association

I recommend it. If you are not technically oriented it will go way over your head quickly.

Hmm... 3 topics?

What are your goals?

Do you have a broken E-Bike that you simply need to repair? Or are you wishing to become a certified technician as part of your occupation? Two very different beasts, and two very different approaches.

If this is your personal bike that you need to repair, then one option is to find all the manufacturer manuals, and parts diagrams for the bike. Try to figure out more or less the fault, then dive in.

I don't have an E-Bike, but before going essentially car-free, I've done almost all of my automobile maintenance since being a kid. If I can't fix my own vehicle, then might as well load it up and haul it off to the junkyard. It isn't that I'm a master mechanic, but there is nothing that intimidates me either.

And, today there is much more information about just about anything on the internet than there was 20 or 30 years ago. So, if you can't figure out how to open something, hop on the internet, and it is likely that someone else has already done so.

Oh, one other thing.

In modern electronics, many people replace things like circuit boards as a unit.

If you're wishing to diagnose and repair a circuit board, make sure your class actually teaches that aspect of E-Bikes.

If the course is mostly plug & play, then it may not be much different than an enhanced regular bicycle repair class.
