Please! some advice on setting up and adjusting SPD cleats.
Also anything to say about fore aft adjustment of the saddle?

Set cleats so the head of the first metatarsal is a little forward of the pedal spindle. Align so the feet are aimed straight ahead and the heel, ankle, and shoe don't hit the crank. You can experiment after getting used to what a fairly standard setup feels like.
Set saddle setback so your center of gravity is roughly over your feet when in a neutral riding position (usually, hands on the brake hoods). There's a bit of latitude here, but you'll know soon enough if you're too far forward (doing pushups throughout the ride) or too far back (sitting in the back seat).
