Because the bike is artificially being held upright, rather than you balancing the bike like you do on the road. Standing on rollers is also tricky, but for a different reason.
Assuming that you have no problem standing when outdoors . . .
Outdoors on the flat, try standing while not moving your body from side to side and thus holding the bike perfectly upright. That feeling might transfer to the trainer for you.

It does feel stupid since you can't move the bike side to side. On the road when people get out of the saddle, everyone does it a little different. On the road, some people look like they are on a trainer. Bouncing straight up and down while the bike is perfectly straight. Others, like to use their upper body more and swing the bike side to side. You are probably one of those and feel real weird on a trainer. Others will be like; what's your problem? Get one of those trainers that allows you to swing. The Kenetic Rock and Roll for example.
