The bikes you likely would have been suggested to you without the fit by a salesperson just looking at you when you came in the door after finding out what type riding you wanted to do. The changing of the stem lengths could easily have been something you might have figured out on your own after riding them a while.
You are overthinking everything and so far winding up with no bike.
The bike shouldn't be your one and only bike purchase for life. Get one that isn't going to drive you to financial ruin. Then after you have some experience on it, trash it or give it away and get another.
