best panniers ?

New to bicycling, I looking for some panniers medium sized a minimum of zippers and cinch straps to close , I was hoping you guys could give me ideas were to start such as brands/models to Check out thanks

Basil Cote D'Azur. No zippers just old fashioned cam buckles.

Rugged and affordable.

Ortliebs are the best IMHO, although Arkel fans may also have a point. Sports Packer, original or Plus. Two buckles per bag, easy to mount or dismount on the racks.

One critical decision that may impact brand selection is waterproof or not. I'm a fan of not waterproof, and in those cases when you want to protect something you are carrying from water then you put it in a dry bag or a plastic bag. Arkel for me.

I have both Arkel and Ortlieb. I have abused both through all kinds of weather, and both continue to perform admirably. It's not that big a deal to me to slip on the rain cover on the Arkel's. That said, I usually go with the Ortliebs when weather is questionable.

Touring or Utility-commuting?

Heavy Canvas Carradice are Classics and can last a lifetime .. leather straps and Metal buckles..

Ortlieb I have their roll closed dry bag set, my utility favorite, one big dry compartment.

in compartmentalized bags I got a lot of use from a set of Robert Beckman 'Needle Works' Bags ,
Mine were made to fit Bruce Gordon's Racks , I got someone else to sew up rain covers .

Have owned several pairs of Ortliebs, and can see no reason to switch brands.

If you want to pack your bike you should specify for what purpose you want to pack your bike. A cardboard box for the air plane, a sturdy box to put on the roof of your car?

If by ¨bike packing¨ you mean riding a bike with all you need to go camping I would like to suggest Ortlieb, 4 bags. Two large bags on your rear, two smaller ones on your front wheel to keep you from toppling over when you hit the steeper climbs and for an overall better ride.
