I did a century ride with MKS Urban pedals and leather straps with clips. Wore Cinelli DVS shoes which are reinforced for cycling.

I don't think the question has been asked of what someone "has" to use but rather what we do use. I have switched back and forth between bike shoes and sneakers off and on but I ride far enough that I seem to come back to bike shoes sooner or later. I have a box full of pedals and at least three sets of flats and three sets of SPD type pedals that are not on bikes.
If someone is new and they are just getting started any shoe will work. It is only if, or when, a rider starts finding foot discomfort that they might have to start looking at different shoes, or pedals or maybe go back to riding less.
After something north of 25,000 miles of cycling I have learned to make my feet comfortable, at east skater shoes but more often than not bike shoes. I don't wear anything with a seam down the center of my shorts or under my shorts. I have tried it and no thank you.
One reason I wear cycling shoes and clipless is stopping and starting at stop lights. I can sit there till just before the light turns green, lift my left foot and the crank arm comes up to the 2 O'clock position and a get one good thrust to start across the intersection. I have been doing that for so many years that when I have put flats on my MTB and happen to be riding to a coffee shop or something and when the light changes I am totally surprised when my crank arm and pedal stays in the down position unattached to my foot. Like I said that is just me.

I've been using look style shoes and pedals for a long time now. Used toeclips and straps before that. Use whatever you like. A nice compromise might be to get some shimano spd type pedals with the cleat on one side and a regular flat pedal on the other. So you can use them with all shoe types if you wanted. The spin bikes as the YMCA near me had pedals like that. Then you can get either touring or MTB shoes with the recessed spd cleats.

Just bought a pair of Pearl Izumi mountain bike style shoes and Shimano A530 pedals this weekend. Installed the pedals on my DF and recumbent bike. Have only ridden on the DF bike so far and I'm wondering why I did not do this sooner (I'm 67 yo")! Cadence and overall speed has increased (just wondering if it is not the "new pf flyers syndrome LOL). Also being new to clipless, I am mentally continuously saying to myself "Don't forget to unclip, don't forget to unclip, don't forget to unclip."

To return with an update, my own personal anecdotal evidence:
This spring, I was having foot numbness issues usually only a few miles into my 8 mile after work bar rides. Bought a pair of Giro Rumbles for a tour, running platforms without any retention, 45-55 miles a day over a week, and only once did I have anything resembling tingling. The stiff sole seemingly has helped considerably for me.
