What is the practical difference between Schwalbe Performance & Evo lines?

Somehow I managed to end up with three pair of new Schwalbe tires for one bike, all unused, purchased about seven years ago. They were stored well; I'm not concerned about age.

Two pair (Marathons Deluxe, Mondial) are foldable Evolution Line Double Defense. One pair is Performance Line Race Guard Lite Skin wire bead. Schwalbe rates their Double Defense 6/7, with 7/7 being the Marathon Plus. The wire bead pair is trickier. Schwalbe rates LITESKIN (one word, which may or may not be the same as Lite Skin) as 2/7 and Race Guard as 4/7.

What kind of difference can I expect between the Performance Line Mondial and the Evo Line Mondial? Among current models, the wired Mondials are 20g lighter than their folding counterparts, but their heavier bead puts their CG closer to the rim, so they should be slightly quicker, but I don't care about that aspect. I'm mostly interested in any differences in how they hold up on badly-maintained (but usually pretty clean) pavement, but I'm also interested in differences in flat resistance. If there are other meaningful differences, please let me know.

If the differences are only academic, and not meaningful in real world use, I want to use the wire beaded pair first, because they take up the most storage space. OTOH, if the Evo line offers meaningful real world benefits, it doesn't make sense to not use the better tire.

(I've used both Evo and Performance line Schwalbes, but not in similar riding environments.)
