What about jerseys?
For the past few years I have resisted the urge to buy a jersey. I have worn Under Armor, Stay Dri and Dri Fit shirts that have seemed to work well. I think my hesitation is from not wanting to be 'that guy'. The one who get's all George Hincappie looking just to go out riding. That and not really knowing how a $70+ dollar jersey will effect my riding vs Under Armor (which I get through work).
Is there a difference in quality/performance here? Or a less expensive place to look?
To be honest I would kind of like to find an old USPS team jersey. I know it kind of goes against what I said above but that's another story. lol

My suggestion is to wear something that is comfortable and breaths.....that wicks the moisture away from your skin as you ride, and don't worry about 'performance'. I'm a bit older so shaving 1/1000th of a second off my time on a ride of 20 miles for 1hr 15mins. by what I wear is really not important to me.

I've been wearing some old bar room baseball shirts (nice light spandex material) for years and love them.
Last year I asked the LBS if they would be getting any replica Yellow jerseys from the Tour that Armstrong won, mainly because I thought it would be his last one and wanted to wear one because I was proud of his accomplishment. To make a long story short, they never did get them in and so again this year it's the old baseball shirts and I'm fine with that.

I am so used to riding with rear pockets in bike shirts that I fear I will absentmindedly drop my keys on the ground if I ever ride with a normal t-shirt. One day they will fall down the nearest drain hole and I will be in deep trouble.

Nashbar has some nice looking jerseys on sale for $34.45. And check out their "returned goods" section. If I was rich, I'd have hundreds of jerseys.

I refused to wear Jerseys for years.
This year I broke down and bought some.
Learned I was mistaken for years, now I'm much more comfortable.
Best features: back pockets, tight fit for warmth, zipper to regulate temp and wind exposure

With a litle patience and searching a good jersey can be bought for $20. I prefer the loose fitting jerseys and these wick moisture better than sta dri shirts I have tried.

Under Armor is good. But it is kind of wierd. I don't get hot (which is the point) but when I take it off the inside is wetter than the outside. It doesn't seem to transfer as much moisture away as I'd like. But that's the nature of the beast I guess.

I got two of these when I wasn't sure about the whole jersey thing. They work wonderfully, the pockets are nice etc. My only complaint would be the zipper which is a bit finnicky, but for the price I'm willing to get over it.
I still use it over some $80+ jerseys I got, when I don't feel like being a rolling ad.
