Bikes: Trek 4500, Kona Dawg

At my school, if there is enough interest and you can properly related it to your major, you can work with a professor to form a guided study course. A couple of my friends created "Race-car Vehicle Dymanics" to help them develop a Formula SAE (kind of like a mini Formula One race sponsored by SAE) car for their senior project.

That reminds me of when I was on the Solar Car Team at my college (also competed in an SAE event)
