Widest range cassettes on the market

I've decided to use a cassette in lieu of a freewheel. I had a 11-34 Shimano freewheel. Is there anything close to that in a 7-speed? SRAM offers a 12-32. How difficult is it to assemble a cassette from individual cogs thereby customizing your rear cluster?
