How fast do you need to be for the wheel/rim to start like its moving backwards?

Just a thought cause it looked pretty awesome seeing that you can go ride so fast that the wheel does that.

I think you are referring to the "Wagon Wheel" effect referred to in the above Wikipedia post. It only happens in movies due to the strobe affect of the camera opening and closing at 30 FPS. You might also notice it under incandescent lights since they have a 60 Hz flicker (50 Hz if you live in Europe).
