We sell both at the shop I work at. Different style bikes different geometry. Cypress is a very upright position.
Have test ridden both? I would do it ASAP as bike inventories are rapidly depleting.

If you are going to be riding for 30 miles daily you might want to look at something in a hybrid instead of a comfort hybrid like the Giant Escape or the Specialized Sirrus. 30 miles is a pretty long ride for a Cypress. I rode a Cypress for about three years before I switched to an Escape. I am much more comfortable on the Escape than I was on the Cypress.

The geometry of the Escape and Roam are very close. The one big difference I see is the Roam has a front shock. Other than that, I think they are comparable bikes.

The Talon 3 is a mountain bike and not really what you would prefer for 30 miles of pavement.
