What would you change first?

Just bought used Trek FX 7.1 (2009). It looks great and it is a mint condition. Just curious, according to your experiance, what would upgrade first on such a bike. Please advise?

Probably just the saddle, bar ends, fenders and a rack. But if everything is to your liking and functions for your intended purpose, I don't see the need to change the bike. Ride and enjoy.

I would add lights and fenders,but I wouldn't change anything until I rode it and decided there was something I didn't like. Saddles are an individual preference,so I'd keep or change the saddle depending on how it felt. If the ride is rough,I'd go with wider/lower pressure tires. If the bike doesn't fit right I'd look into a different stem and/or bars. If the gearing isn't right,I'd swap the cassette and/or rings. Otherwise,I'd leave it as is until things wear out.

Water Bottle & Cage, seat bag with tube, 2 plastic tire levers, and CO2 bottle with nozzle. Lights if your going to ride at night. All these can be moved to a new bike, if you decide to upgrade anytime soon. I would just ride it now, you will start noticing things you want..
