Help Me Decide

I'll be getting a new bike soon. I'm a newbie that's just getting into the sport. I'm looking for a decent bike that I can ride on trails and around the neighborhood from time to time. My budget is around $1200 and am considering the following bikes. Which one would you guys pick? The one that will be the easiest to try and buy will be the Roscoe 7 as there are multiple Trek stores where I live, however it seems to have a QR141 rear hub, which seems like it might become problematic down the road if I was to do some upgrades.

Bikes: Zipp2001 Carbon Belt Drive SS, Kestrel RT900SL, Kestrel KM40 Airfoil 1x10, Orbea Occam H30, Trek Stache 5 29 Plus, Giant Yukon 2 Fat Bike

What I always recommend is if you can take some different demo bikes out for a test ride to see which you like best. The shop I deal with let me take 3 different brands (demo bikes) home for a weekend so I could use them in the environment I was going be riding them in. I decided on the Trek Stache 5, 29 plus, and my wife decided on the Specialized Fuse. In my 40+ years of riding and more bikes than I can count, I've never not bought a bike without test riding it. I even flew out to the west coast and spend 4 days out there when I bought my Zipp2001's.

Bikes: Stormchaser, Paramount, Tilt, Samba tandem

They're all fine.

A lot of nice TA148 hubs can be run as QR141 even though not stated, because they take the same end caps they did when everything was QR135/TA142
