Here's a simple 35-mile loop: Rt. 9 west, Rt.148 north, Rt. 122 east, Rt. 56 south, which will bring you back to Rt. 9 in Leicester. This will take you through various Brookfields and parts of Rutland and Paxton, all on numbered roads so you won't get lost. 148 is a nice long stretch of country road. 9 and 122 can get some traffic but on these sections they mostly have wide lanes and shoulders. 56 is 2-lane with no shoulders and sometimes fast traffic, but I have ridden on it dozens of times without getting killed yet (and feel no need to avoid it). No "serious" hills on these roads, but you'll know you're not in Kansas :-)
