SS First timer

Hey there, I am brand spankin' new here. I am wanting to either purchase or build a vintage road bike to turn into a SS. I was hoping some people here could point me in the right direction. My wife is holding me to a super tight budget for a initial start up because she thinks its a dumb idea. Anyway, looking for info, connections to bikes, etc.

Common freewheel hubs can be adapted to use a single speed freewheel.

I've always wondered why people don't just yank out the shifter cable, then drive the derailleur to the gear they want with the limit screws. *BOOM!* No gear selection while riding & bike can always go back to being fully functional any time $4 can be found for a new shift cable.

Or even better, pick a gear and never shift. Single speed with no mods!
