Despite a NY Times subscription, I can't do a 'gift link' of this article from the 'Athletic' but hopefully you'll be able to read it anyway. It's a fascinating, in depth article on diet and nutrition as practiced by Team EF, in particular Ben Healy; and the day they highlight is Stage 6, when he won from the breakaway. It's really remarkable how dialed-in this is, and if you listen to interviews with older (like mid 30s!) cyclists, they say it's quite different from how things were even ten years ago.

Saw an interview with an EF guy that was in charge of regulating body temps of the riders. Healy was the example. When they ice them down, how they will let just the legs warm up pre race, how they cool them during and after. Body temps monitored 24/7…

Sleep as well. Healy was sleeping 10 hours a night.
