Road Cycling “It is by riding a bicycle that you learn the contours of a country best, since you have to sweat up the hills and coast down them. Thus you remember them as they actually are, while in a motor car only a high hill impresses you, and you have no such accurate remembrance of country you have driven through as you gain by riding a bicycle.” -- Ernest Hemingway

I've got a new Specialized Allez Sport. Looking to try out clipless pedals, would like to start with something cheap and ebay-ed. Will all pedals fit, or is there a specification I need to know about? I also see a few that say "Pedals and cleats". Do the cleats then just screw into the shoes?

All pedals will screw into your crank arms. If you're buying new pedals, they will come with the proper cleats for your shoes. The thing is, you need to make sure your cleats will be compatible with your shoes. SPD-style cleats use a two-bolt pattern that runs in two parallel slots on the sole of your shoe. These include the Crank Bros. cleats. SPD-SL, Time, and Look use a three-hole pattern that mounts in holes arranged in a trianglular pattern on your sole.

Many road shoes come drilled for both patterns, although some will only come in three-hole. If you plan on getting MTB style shoes with tread for ease of walking, they will only be compatible wth a two-hole pattern.

Virtually all pedals sold in America will fit bikes sold in America. Cleats do need to match the pedals used and shoes need to be compatible as well. Yes the cleats generally screw into the shoes. Advertising for pedals will generally mention compatability. Advertising for shoes virtually always does. Have a chat with your local bike shop.
