The only reason I ask is because I have never ridden up Folk but used to date a girl that lived near it so I saw it all the time and I think Taylor in SF is just as steep. The climbing section of Balcom Canyon is reported at 20% with a section of 22 and that has to be steeper that Folk. Just curious.

Zigzag increases the run for the same rise, so it effectively decreases the grade. You can compute the "effective" grade using:
Effective Grade = cos(ZigZagAngle) * Actual Grade
So if you zigzag at 45-degree angle on a 10% grade, it would end up feeling like a 7% grade. Obviously riding at a 90-degree angle would have you riding up a 0% grade off the side of the road...
One tip for making the switchback easier is that 5-10ft from when you want to make the turn, go a little more horizontal to pick up some speed, that helps you make the switchback without slowing down too much.
