CAAD8 has won the TdF and the Giro for sure...Vuelta? Not to mention countless other races. F75 never has and never will...you are talking apples and oranges IMO.
Of course fit is vitally important...but the CAAD8 is the better frame all else being equal.

I have an CAAD8 R1000 and love it. But it took a couple of days of riding several bikes back-to-back to get me there. In fact, when I bought my first road bike (a 2003 Lemond Tourmalet), I had ridden an R600 at the time, and thought it fit just right. However, I couldn't bring myself to spend a few hundred dollars more on the C'dale. What I found out was that the Lemond just never fit me right, and I made it a point to be patient and try out a lot of bikes with different materials, geometries, etc. So I took a day and just rode a lot of different bike. A few weeks later, I came back and got it down to three bikes, the R1000, and Orbea, and a Felt. All three were very nice. I actually took the Orbea out of the running because of the color scheme. I tried to convince myself that the Felt (a leftover F2c) was the right bike for me. Such a beautiful carbon bike. But every time I got on the R1000, it disappeared under me. Perhaps we could have fiddled with the Felt to make it fit right, but after my experience with the Lemond, I wanted to be confident of what I got.
None of this is to say that the R1000 is the right one for you. But take it from someone who learned the lesson of not having a bike that fit right. If these are the only two choices available to you, hopefully one will give you a great fit. I would take that over almost anything else.
