Road Cycling “It is by riding a bicycle that you learn the contours of a country best, since you have to sweat up the hills and coast down them. Thus you remember them as they actually are, while in a motor car only a high hill impresses you, and you have no such accurate remembrance of country you have driven through as you gain by riding a bicycle.” -- Ernest Hemingway

Many out to choose from ranging from the carbon wheels sold by bikeisland.com to Reynolds and everything in between. Many choices and a large price range. Narrow it more and we'll narrow more the recommendation.
You live north of me? and you say you live in S Fla? is a joke... anyhow I can get the Reynolds at a good price, now I just have to finish saving $$$$ to buy the bike, well that is if my economy get's better.. but hopefully mid year ....

I rode out your way for a week 2 weeks ago. The locals told me the crosswinds were worse than usual while I was there. Even so my Mavic Carbones worked brilliantly out there. In addition I saw many others on Carbones as well as lots of 404's and other 50mm+ wheels. For me that's where my money would be......GO DEEP!!

Does 1200 feet of climbing count as flat for a 30 mile ride? This is a serious question. I had about the same amount of climbing when I lived in NW Arkansas.

Should I be thinking about 50mm hoops for my next bike

I still think rolf is overpriced.
