Thinking of building a first frame, good non-drivetrain components

I already have a drivetrain and wheels all picked out (SRAM Rival, Mavic Aksium), but what are good companies to buy the other parts from?

Fork is included, so by my estimation, I need

Stem
Headset
Bars (and tape)
Seatpost
Saddle
Pedals

I don't need light-weight stuff, alloy is fine for the bars/stem/post. What are good, reputable companies to buy these from, and what can I expect to pay for all of this?

stem: deda, ritchey, thomson
headset: well which one? there's something around 16 different sizes and specs
bars: deda, FSA, PLT
seatpost: thomson, deda, ritchey
saddle: specialized, fizik, selle italia, brooks, etc.
pedals: shimano, look, speedplay, etc.
