Plus, you could see a huge tool chest behind Leipheimer. And, I'm sure it depends on the rider. Some could be mechanics post-career, and some probably can't fix a flat.

Yep, depends upon the rider. Lance is well known for being a bit fanatical about equipment and can probably do a lot of his own maintenance. George Hincapie, on the other hand, has famously admitted to having no interest or aptitude in the maintenance of his bikes. He can probably fix a flat during a ride, but apparently doesn't really do anything else.
