One Water Bottle or Two?
On a typical 40-60 mile weekend training ride, How many of y'all carry only one bottle? How many carry two? Why?

2 because I feel that I need it, and I usually use it. mmm now I'm dreaming of my 40+ mile ride tomorrow ... mmm 50 degree high

One in the winter. Two all other seasons. I prefer 32 oz bottles. Used a 24 today, and it was just right.

I like to mount 3 bottle holders on all my bikes. 1 for water ~ 1 for tool container ~ 1 for headlight battery
In the summer when I ride 40+ miles I carry 2 water bottles but often barely need the 2nd cuz I find liquids along my route. If you'll be ridign through towns and stopping for lunch, etc, then 1 water bottle is enough. If you're carrying food and may not be in towns with stores, then bring 2 water bottles and sprinkle a little salt into each. don't forget your potassium and a tiny bit of magnesium.

This is what it comes down to?
Try this, take 2. My guess is you have two cages on the bike. Take 2 bottles. If you don't use one, it's no great big loss to have carried an extra pound of water with you.
If you don't use one, and you've ridden 60 miles - 3 hours or more - then you are an absolute idiot for not having consumed enough water while riding and you will not have replenished the body's water loss.
Of course, it is much easier to come on just ask a question than to apply any degree of common sense.
Rule of Thumb for the future - minimum one bottle of water or fluid per hour.

During July when it's 100F and 15%RH, I'll carry three for that distance (1 in the jersey pocket) and still need to stop to refill.

Depends on the course. A 60 miler on the trail, one bottle as I can refill at parks along the way. If it's a ride into the mtns, 2 and hope it's enough for the 20 mile 5,000 ft climb. Hills around home, 2 but I also stop at local parks to refill on a 40-50 miler.

In warm weather, 1 bottle per hour is a pretty good rule of thumb. You lose significant power output with very minor dehydration. If you wait till you are thirsty, it is way too late.

Unless the ride is short enough to do without water, I carry 2. Fumble 1 it breaks or lands in something questionable, you then have a bottle to at least refill.
