What should I take with me on a bike ride?

I'm always amazed at the sheer volume of crap people haul around whenever these threads come up. I ride many thousands of miles each year with a fairly minimalist seat bag (Co2, levers, one tube, boots cut from an old tire, maybe a patch kit), and an inflator in my jersey pocket with another CO2. Cell phone, cash, credit card, ID in a baggie.
I'm currently riding some fairly deserted roads near Madrid, Spain, and I'm traveling solo. My "travel seat bag" has a whopping two tubes, 4 or 5 CO2 cartridges, boots, and a small multi-tool in addition to the stuff above.
If you look your bike and tires over before you ride, you don't have to go crazy. I keep waiting for somebody to post a picture of their BOB trailer with the spare bike on it, just in case.

I just did a 51 miler yesterday.
This is what I did.
Ate 2 packets of oatmeal 30 mins before I left.
Took (2) 20 oz water bottles.
A saddle bag w/2 clif bars, 1 pack ZUM tablets, Gatorade gel shot, multi tool, cell phone, and my ID & debit card.
I installed slime tubes the night before so I took my chances w/out a patch kit, and pulled the frame pump off. Yes, I was lucky.
Left at 9:30 AM & the oatmeal did me great to about 30 miles. My problem was I stopped at a event I was going to (20 miles in) and left at 2 PM when the sun was scorching. That is when I consumed just about everything I had to get back home. Had I not stopped at that event, I could've gone alot farther or not consumed as much. I had to refill 1 bottle at a Subway on the way home. The heat kills.

I have really bad luck with flats. I carry a hydration pack without the bladder:
1 extra Sportsdrink
3 Tubes
1 Flat kit
2 Multi-tools (one, traditional bike and one that converts to a knife and pliers/wrench)
Saddle rack that hold two additional bottles and 4 c02 cartridges
1 Mini-pump on frame boss bracket
2, 200 lumen flashlights
2, GoPro cameras
1 Armadillo Tire (yes, the whole damn thing)
1 Compact vest
1 Mini speaker
1 Mp3 player
1 wallet
2 Keys
1 Cellphone
Various pills and drugs
1 extra Sportsdrink

Here's all I carry for any ride > 20 mles.
Two tubes AND a patch kit. As was said above, sometimes you get N+1 blown tubes, where N is the number of spares you carry.
Pump or CO2 inflator.
Tire levers.
Chain tool - got me home one day when my rear derailleur cable broke 8 miles from home.
Spoke wrench - got me home when I broke a spoke 20 miles from home.
(It's been years since I needed the chain tool or the spoke wrench, but having needed them once.....)
Two bottles of sports drink.
1 PB and honey sandwich (cheaper than an energy bar and doesn't give me gas).
Cellphone, drivers license, health insurance card.
$5
Front door key
If it's a long ride, and/or a hot day, the $5 comes in handy to buy drinks and/or candybars.

I normally just carry a tube, co2, tire levers and a multi tool in my seat bag. As far as jersey pockets i'll bring a couple energy gels and a clif bar or something similar depending on how long the ride is. Also carry a small hand pump just in case my co2 fails. Phone, some cash, my ID, and credit card in a ziploc bag i always bring no matter how long the distance.

You will be glad you had it. Also a larger patch in a patch kit can also be used as a boot in the tire. Good luck be safe and have fun.

How are you guys buying stuff along the ride? Do you take your bike into the store with you? There's no way I'd leave any $1000+ bike out front while I pop in to buy a drink/snack. I dont see a U-lock on anybodies list (not surprising), so whats the secret?
