On a separate question, does the weight of the shoes have any impact on cadence? My guess would be no because the weight are countered on the opposite pedal. Beside being lighter and prob cooler, what are the benefits of extreme light weight shoes?

No. Good stiff shoes are good stiff shoes whether they're lugged mtb shoes or road shoes. If the sole is stiff, it is the platform, and pedal "platform" is irrelevant.

The weight of shoes if like the weight of rims. It adds to dead weight, and also adds rotational inertia (AKA, moment of inertia), making a very small change in the speed with which you can accelerate or decelerate but not affecting steady state speed.
