backpack weight
On long rides I take a back pack with extra tube and such. I've heard that every pound on bike equals five in pack. Is this ratio correct?

I think it makes a difference if your bike has suspension, in how well it holds the road. On a road bike with no suspension (ie, your body is the suspension spring) it's only sprung weight if you're out of the seat and cornering, accelerating or stopping. It won't make any difference in performance, acceleration, going up hills etc. So mostly "no", but in the specific case of cornering on the road with a mtb I'd expect that to be about right.
For a road bike, the advantage is also counterbalanced by the advantages of having the load carried low, which is the preference of most touring cyclists.

A backpack is a pretty awful way to carry weight on a road bike, especially if your position is at all aggressive. If your long rides take enough time that you can't carry what you need in a jersey pocket, a Carradice or even a handle bar bag are good alternatives.

Yes, weight is weight, but, one thing is true: placing that additional weight anywhere on your person will have a greater negative impact. It does influence as a cost of energy and stress to you at all your bike touch points as well as the overall physiological adaptation you make to carry that weight on your personal frame. Your better served lugging that weight on your bike frame. Your are even better served eliminating that weight altogether
