Always.
Does anybody know if there is a way to create a route/segment/course on strava without having to ride it first?

You can import .fit files directly from the 800 into GC. I normally save them in a folder and load them into GC and Strava separately. It used to be possible to load into GC and then have GC send the file to Strava but Strava recently discontinued their 3rd party API so that link no longer works.

Debatable and not really a factor unless you're going on an eight hour ride.
This is what Ziplocs are for.
So does Strava.
Also, Strava's free, most people are going to carry their phone on rides anyway, many people already have smartphones, the ability to sync over cell is convenient and having something integrated into somethig you carry with you all day is nice. Garmins have some unique benefits and make a lot of sense for some people, but so do app-based solutions.
it's waterproof (think rain)
and it works when there's no cell reception.

Correct. When you plug the 800 into your computer it shows up as a drive with folders. The .fit ride files are stored in the activities folder. Normally, I just move files from the activities folder to a folder on my computer.

For anyone who wants real-time riding information, a dedicated device like Garmin 510 is the best choice. You can also load routes into them, and export or upload your rides after you are done riding to a bevy of websites or desktop apps of your choice for analysis.
If you don't need to look at the info while riding, or don't ride very long, then a Strava or MyMyRide app on a smartphone would be fine.
