I have front and rear brakes, mainly because I like to grab the hoods and I have two hands. I could just use the dummy lever for the rear, but that's pretty funky looking imho.

You'd be much better off with a front brake.

I run both F/R in our steep hilly terrain on rough roads, with serious foot retention.
The brake hoods are necessary for the inevitable out of the saddle climbing and feathering the rear to prevent "hamster-in-wheel" syndrome on the descents works well but the Front brake is where serious deceleration happens when it has to, and it will have to sooner or later.

Front brake only: shorter cable = less weight.

Rear brake only: better skidding.
