On my SS bikes, I like:
42/15 or 42/17t road
51/15t track (outdoor)
Even 48/16 is much higher than I'd want to go on the road. I'm also a 2019 (Ca) state champ in the TTT (team time trial) so I know a thing or two about going fast. Spin for the win!

I'm in the shades... ~31 MPH for about 45:56. Avg cadence around 100 RPM

Kudos! TMonk! Oh, if only I were 40 years younger! I ride strictly for exercise. 48:16 gives me all the workout I need. I’m happy to average 80rpm. I’ve hit 105rpm on a rare windless day. Just got called back to work(restaurant) and will use the 11 miles as warmup for the 8 hour kitchen chef work day then return home. I use the return ride to clear the mind. I’ll do this 5-6 days a week. That’s all the riding I can handle!

That's plenty riding, and more than most!
Since shelter-in-place orders, I've been spending about 10-12 hours/week on the bike, which is about 20% down from normal. Still working full time (~44 hrs/week). Motivation is lower than usual on weekdays before work (with no racing)... But the long rides on the weekend are something to look forward to, I've been going pretty big. Took Wednesday off to do 97 mi. w 5,100' elevation.
I miss routine Tuesday night track racing, and the "effortless" intensity that it brought to my training regimen mid season. By effortless - I mean fun. Most Tuesdays saw a 10 mi road commute each way to and from work, then a short drive down to the velodrome for racing - perfect.

Same problem here, riding a triple triangle coaster brake with 52/18 and seems to be short sometimes, looking for a simple cog 16t or upgrading the rims to 28 as the bike rides fast in cruiser speed for really long distances but i would like to low the rpms and get some more cruise speed

Okay it might be great for someone who doesn't want to ever go near 30mph but it doesn't work for me. I had to replace my rear cog(15t) a few days ago to a 16t(already had it). It's a dura ace cog and lock ring. Should I buy another rear cog and lock ring? Or should I buy a new 52t chain ring?
Youre right 48x16 is garbage. 48x18 FTW
