Now can you run either fixed OR a freewheel cog on this if you wanted to coast?

any flip flop (fixed/free or fixed/fixed) hub will allow you to do this. iro hubs (formula hubs rebadged) happen to come in either flavor

Get fixed/fixed.
You can still run a free wheel on the other fixed side and if you ever strip a side, the hub isnt useless.
