Also I just ride my bike too, quite a bit actually. I lift simply because I enjoy it and it makes me feel better about my body than I would doing aerobic exercise alone. Twice a week, one upper/abs and (recently) one lower/abs.
From a training perspective, lifting makes me less prone to overuse injuries and acute injuries from crashes. I'm sure it also increases my 1-5s power output numbers, but those are rarely the limiters in the kind of racing I do where the last few laps are fast and a sprint can be 10s or longer.

I don't ride fixed so I am curious. Is it the decelerating or 'braking' with the legs that works the glutes?

Do you spend much time out of the saddle? I haven't ever really done an analysis on what bits of cycling activate what muscles. I can tell you that the best way to get sore in oddball spots of your legs is to do a one-leg ride.

Depends on the bike. My "kids" bikes, yes I do. I call them Kid bikes because they have 26 inch wheels and are for riding like when I was 14. Wheelies, curb hops, 'powwerslides', and general hooligan shenanigans. On my 700 bike I'm rarely out of the saddle because the trail that I ride is 76 miles of flat, manicured, billiard table smooth asphalt. The Trail of The Coeur d Alenes. Trail of the Coeur d'Alenes bike path in the Idaho Panhandle
Yeah I imagine just a couple miles could really tweak things. Gotta go check my pedals and cranks now.
