"big" tires

so i need a recomendation on tires... i just bought a new wheelset and my vredestien forteeza's are a serious chore to get over the rim. i've long known that some rims have higer lips than others, and some tires are made tighter than others, and this current setup isn't going to work.

so... anyone have any suggestions for good road tires that are easy to get on and off the rim? thanks!

p.s. bonus points if they come in blue
