I mostly cruise over to Hub on the west bank because I live in marcy holmes and its the closest and I really like the guys and gals who work at it.

I was very impressed with the folks at One on One. So much so that in between meetings I went over there bought a bike from them...and I live in Florida.
They ordered a machine, had it modified and shipped it.
1500++ fixie miles since mid-December

One on One is a solid shop, they do a lot for the community riders, and they sell good products at good prices. Fully support this guys comments.

I've really liked The Hub the times I've gone. I mostly go to the South Minneapolis one, as it's got the used goods.
Also, if you're in Dinkytown stop by the Varsity Bike Shop. It's super small, but seems to have a decent amount of fixed-related stuff. I picked up some single space chainring bolts and chatted with the friendly fellas behind the counter a few weeks ago. Things seemed pretty reasonable.

+1 on on The Hub.
Never hit up One on One ( may go today though).
Also, if you are into stores that sell Nike Dunks with Deep Vs and anodized crap to match, the is apparently some sort of shop in the Southdale Mall as well.

virtually any shop in the twin cities area carries at least some fixed wheel related stuff. The smaller shops tend to have a bit more in this regard. Hub bike co-op and one on one, freewheel should have some stuff to. Behind bars is a good one aswell.
