Also, you might want to look for Shimano 600 (6400) components. They are geared, but you can likely get parts to work for you (e.g. cranks, brakes, brake levers).

some recent campy group (centaur? chorus?) came with a grey metallic option.
current ultegra SL has a gunmetal finish.
gran compe hubs are gunmetal anodized.
apparently the 144bcd sugino zen comes anodized grey but i haven't seen one in person.

dura ace track cranks are probably not exactly "gunmetal" as they are not dark enough but they have this silky smooth-ish sheen look yet still are polished, and not raw metal looking. it's hard to describe but you could work it in.

given the right material, you could always find a place that will parkerize your parts. that isnt quite the traditional "gun metal" color, but it would definitely look like military firearms, reduce reflection, and resist corrosion like a champ. i have also always wondered about bluing parts... what a notion!
