Bikes: Early 70's Conversion

Suggestions on rebuild

Looking for suggestions on replacing a few parts before i blast and powder coat it.
Most of the bike shops around me the people who work there dont really ride.
So looking as replacing this stuff right away,
Handle bars, i like the bull horn style and brake levers, but open to suggestions.
Crank and Gearing, Noob at FG but will be using it alot and fliping hub to free wheel for lazy days.
Rims and Tires, going to ride hard and dirty, will be spending time jumping up onto curbs and down
so need something that can take it and preform on street.
Brakes
Pedals

Painted the forks and frame Pearl white, looks nice.
